Changing the definition of a vertical coordinate system can be done but you should be aware of the consequences.

When changing a vertical coordinate system the meaning of all spatial data stored with features (and their observations) that reference a geographic or projected coordinate system which uses the vertical coordinate system will change.  I.e. the spatial information will not be modified and the therefore the real world position of stored spatial data will change.
