Changing the definition of a projected coordinate system can be done but you should be aware of the consequences. When changing a projected coordinate system the meaning of all spatial data stored with features (and their observations) that reference that projected coordinate system will change.  I.e. the spatial information will not be modified and the therefore the real world position of stored spatial data will change.
